An Overview Of The Academy
The passion for training of two of South Africa's great chefs, Garth Stroebel and Paul Hartmann, has prompted the opening of a new school of culinary art that will see 45 chefs each year being taught by these two internationally renowned luminaries in the world of cuisine.

This school of culinary art offers customised, world-class training for school-leavers and aspirant chefs and will assist in meeting the demand for qualified chefs in the hospitality industry. The training provided is internationally recognized and will equip graduates with cutting-edge skills to build a career in this competitive and challenging field.
The campus is conveniently located in Observatory in Cape Town and offers an upmarket environment and training facilities for just 45 students per year, ensuring the personal attention of Garth and Paul.


Structure Of The Programme

Students will receive the finest standard of individual attention possible, with classes limited to 15 students per lecturer - chefs with unparalleled experience and passion for education and training.
Just 45 hand-picked students will be guided through practical craft and theory classes every day by chefs Garth Stroebel, Paul Hartmann and Samantha Waring.


The programme includes:

• Tuition, incorporating the theoretical aspects of culinary art - from kitchen organisation management and hierarchy, to menu planning and modern presentation techniques, to the theory of food, to purchasing and costing.
• Training, giving students hands-on practical cookery and craft techniques in all aspects of modern cookery with a strong foundation of the classic principles.

Successful applicants for the SOUTH AFRICAN CHEFS ACADEMY's full-time professional course will complete a 10-month training period, divided into two semesters. Tuition and training will take place five days a week for approximately six hours per day and will include some shift work to give students exposure to restaurant-style meal service. The course covers the City & Guilds Certificate, Diploma and Pastry Diploma in Food Preparation & Chefs Arts.
